Cooking Instructions
Follow our step-by-step guide on how to make Mediterranean Frittata with Feta and Spinach.
Step 1
Preheat your oven to 400°F (200°C) and lightly butter a 10-inch nonstick, ovenproof skillet.
Step 2
Warm the thawed hash brown potatoes in the microwave for 1 to 2 minutes until heated through.
Step 3
In a mixing bowl, combine the warmed hash browns, crumbled feta cheese, chopped spinach, roasted red bell peppers, and chopped artichoke hearts.
Step 4
In another bowl, whisk together the eggs and heavy cream until well blended. Season the mixture with Greek seasoning, salt, and pepper. Then, fold in the hash brown mixture until evenly combined.
Step 5
Pour the egg and hash brown mixture into the prepared skillet, spreading it out evenly.
Step 6
Arrange the slices of red onion and tomato on top of the frittata, and garnish with fresh oregano sprigs.
Step 7
Bake in the preheated oven for 30 to 35 minutes, or until the eggs are set and the top is lightly browned. Allow the frittata to cool slightly in the pan before slicing and serving warm.
