Step 1

In a medium saucepan, combine the white sugar, light brown sugar, evaporated milk, corn syrup, and cocoa powder. Stir the mixture well and place it over medium heat. Keep an eye on it as you bring it to a full rolling boil. This is where the magic begins!

Once boiling, reduce the heat to medium-low. Stir constantly as the syrup cooks until it reaches 220 degrees F (104 degrees C) on a candy thermometer. Step 4
Remove the saucepan from heat and stir in the marshmallows, vanilla extract, butter, and chopped pecans. Mix vigorously by hand until the candy becomes creamy and starts to set slightly at the edges. This should take about 10 minutes, and the aroma will be irresistible!
