Start by gathering your ingredients and a large heavy saucepan. Combine the quart of whole milk, 1 3/4 cups of white sugar, 2 teaspoons of vanilla extract, 1 teaspoon of baking soda, and the cinnamon stick in the saucepan. Stir everything together until well mixed. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring continuously to prevent it from sticking to the bottom. After about 20 minutes of cooking, carefully remove the cinnamon stick from the mixture. Now, insert a candy thermometer into the pan and keep cooking until the thermometer reads the soft-ball stage, which is 240 degrees F (115 degrees C). Youโll know itโs ready when you can see the bottom of the pan clearly as you stir. Once it reaches this stage, remove the pan from the heat and fold in the chopped pecans. Using a mixer, beat the candy mixture for about 5 minutes until it thickens and becomes creamy. Pour the fudge into a buttered 9x9-inch pan, spreading it evenly. For a beautiful finish, press the pecan halves onto the top of the warm fudge. Allow it to cool completely before cutting it into delightful pieces.
