Cooking Instructions
Follow our step-by-step guide on how to make Neapolitan Layered Cookies.
Step 1
Start by preheating your oven to 350°F (175°C). Prepare three 13x9x2-inch pans by greasing them, lining with waxed paper, and greasing the paper again for easy removal later.
Step 2
In a mixing bowl, combine the almond filling, egg yolks, margarine, and sugar. Use an electric mixer to blend these ingredients until the mixture is light and fluffy, creating a delightful base for your cookies.
Step 3
In a separate bowl, whisk together the sifted flour and baking powder. Gradually stir this dry mixture into the almond mixture until well combined, ensuring a smooth batter.
Step 4
In another bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gently fold the beaten egg whites into the almond batter, being careful not to deflate the mixture.
Step 5
Divide the batter evenly among three bowls. Add green food coloring to one bowl, red food coloring to another, and leave the third bowl uncolored. This will create a beautiful layered effect in your cookies!
Step 6
Pour the contents of each bowl into the prepared pans, spreading them evenly. Bake in the preheated oven for about 10 to 12 minutes, or until the edges are golden brown. Once baked, invert the cakes onto wire racks, remove the waxed paper, and turn them right-side-up on a baking sheet.
Step 7
Spread apricot preserves over the surface of the green cake layer, then carefully place the plain cake on top. Next, spread raspberry jam over the plain cake and top it with the red cake layer. Cover the entire stack with plastic wrap and place a heavy cutting board or flat pan on top. Refrigerate for at least 8 hours, or overnight, to allow the flavors to meld beautifully.
Step 8
When you're ready to finish your cookies, melt the semisweet chocolate in a microwave-safe bowl, heating it in short intervals until smooth, about 1 to 2 minutes. Spread the melted chocolate over the top of the layered cake, allowing it to set for about 15 minutes.
Step 9
To create perfectly clean edges, trim off all four sides of the cake. Cut the cake into 1-inch strips, then slice those strips into bite-sized pieces. Enjoy your colorful Neapolitan Layered Cookies with friends and family!
