Cooking Instructions
Follow our step-by-step guide on how to make Nutritious Whole Grain Muffins.
Step 1
Start by preheating your oven to 350°F (175°C). While the oven warms up, line 18 muffin cups with paper liners to make cleanup a breeze. Next, take a small bowl and cover the raisins with water, letting them soak to plump up while you prepare the batter. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, white sugar, baking powder, baking soda, salt, ground cinnamon, ground allspice, nonfat dry milk powder, wheat bran, and uncooked farina cereal until everything is well combined and fluffy. Once your dry ingredients are ready, drain the water from the raisins. In a separate bowl, beat the egg whites until they become frothy. Then, mix in the drained raisins, unsweetened applesauce, shredded carrot, vegetable oil, and bran cereal. Pour this delightful mixture into the bowl with the dry ingredients, and gently stir until just moistened—be careful not to overmix, as we want our muffins to be light and airy. Now, fill each muffin cup about two-thirds full with the batter, and for a sweet touch, sprinkle about half a teaspoon of raw sugar on top of each muffin. Pop them into the preheated oven and bake for 25 to 30 minutes, or until the muffins are set and the tops are beautifully golden brown. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean. Once baked, let them cool slightly before serving warm, and enjoy the wholesome goodness!
