Step 1
In a small saucepan, combine 1 cup of water, 1 cup of white sugar, and the diced peach. Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves and the peach becomes tender, about 3 to 5 minutes.
Step 2
Add the minced tarragon to the peach mixture and stir well.
Step 3
In a separate small bowl, whisk together the cornstarch and 3 teaspoons of water until smooth. Gradually add this mixture to the peach mixture, stirring constantly until the syrup thickens slightly, about 3 to 4 minutes.
Step 4
Remove the saucepan from heat and let the syrup cool for about 15 minutes.
Step 5
Once cooled, pour the peach mixture into an electric blender or use an immersion blender to blend until smooth. If desired, reheat in the microwave before serving.
