Step 1
In the bowl of a stand mixer fitted with a paddle attachment, combine 2 cups of flour, sugar, yeast, and salt.

In a saucepan over low heat, warm the water, milk, and butter until just warm (the butter does not need to melt). Gradually pour this mixture into the flour mixture, beating at medium speed until fully combined, about 2 minutes.

Add the remaining flour and continue mixing until a soft dough forms.

Switch to a dough hook and knead the dough until it is smooth and elastic, about 5 to 6 minutes. Place the dough in a large, lightly oiled bowl, turning to coat. Cover and let it rise in a warm place until doubled in size, about 1 hour.

Once risen, punch down the dough and turn it out onto a lightly floured surface. Divide the dough in half, returning one half to the bowl and covering it.

Roll the other half into a rectangle measuring 12x16 inches. In a small bowl, whisk the eggs with a splash of water and brush some of the egg wash over the far edge of the rectangle.

Layer 16 slices of provolone cheese on the dough, leaving a 1-inch border around the edges. Top with half of the pepperoni slices.

Starting from the edge closest to you, carefully roll the dough up, brushing the seams with egg wash and pinching them closed. Place the loaf seam-side down on a large cookie sheet lined with parchment paper and cover it. Repeat this process with the remaining dough, cheese, and pepperoni.

Let the loaves rest, covered, for 30 minutes.

Preheat the oven to 350°F (175°C). Uncover the loaves and brush the remaining egg wash over the entire surface of both loaves.
