Start by gathering all your ingredients to ensure a smooth cooking experience.

In a large pot, bring water and kosher salt to a vigorous boil over high heat.

Once boiling, gradually whisk in the polenta, stirring continuously for about a minute until it starts to thicken.

Lower the heat to medium-low and let the polenta simmer, stirring often, until it transforms into a soft, creamy delight—this should take around 25 to 40 minutes.

When it’s perfectly cooked, remove the pot from the heat and quickly whisk in the butter and Parmigiano-Reggiano cheese until everything is beautifully combined.

Next, transfer the polenta onto a silicone baking liner (or oiled foil or parchment paper) and spread it evenly into an 8x13-inch rectangle.

Cover the top with plastic wrap and smooth it out with your hands.
