Step 1
Start by heating the olive oil in a skillet over high heat. Add one-third of the sliced red onion and cook, stirring frequently, until it turns golden brown and crispy, which should take about 5 minutes. Season it with a pinch of salt, then remove the onion from the skillet and let it drain on a paper towel-lined plate. Set this crispy onion aside for later.
Step 2
In the same skillet, add the remaining two-thirds of the onion along with the bay leaf. Cook over high heat, stirring until the onion becomes golden brown, which will take another 5 minutes. Once golden, stir in a tablespoon of water, followed by the turmeric, chili powder, paprika, ground ginger, and minced garlic. Lower the heat to medium-high and continue to cook, stirring occasionally, until the liquid reduces. If it gets too dry, add another tablespoon of water.
Step 3
Now, it's time to add the chicken and tomato slices to the skillet. Season everything with salt and a touch of sugar. Toss in the crushed cardamom pods, whole cloves, cinnamon stick, ghee, and one more tablespoon of water. Cover the skillet and let it simmer on low heat for about 30 to 35 minutes, or until the chicken is cooked through and the liquid has reduced.
Step 4
Finally, stir in the ground coriander and let it simmer a bit longer until the liquid evaporates to your desired consistency. Before serving, sprinkle the dish with the reserved crispy onions and fresh cilantro for a burst of flavor.
