Cooking Instructions
Follow our step-by-step guide on how to make Savory Harvest Pork Stew.
Step 1
Start by melting the butter or oil in a large skillet over medium-high heat. Once hot, add the cubed pork and cook until it’s beautifully browned on all sides. This should take about 5 minutes. Stir in the minced garlic and chopped onion, cooking until the onion softens and the pork is firm and no longer pink.
Step 2
Next, transfer the pork and onion mixture into a large saucepan. Pour in the chicken broth and season it with salt, crushed rosemary, rubbed sage, and the bay leaf. Bring this delightful mixture to a boil, then reduce the heat to medium-low. Cover and let it simmer for 20 minutes, allowing the flavors to meld together.
Step 3
After 20 minutes, it’s time to add the frozen butternut squash, cubed apples, and if you’re using them, the potatoes and carrots. Stir everything together and bring it back to a gentle simmer. Cook uncovered until the squash and apples are tender, which should take about another 20 minutes. Don’t forget to remove the bay leaf before serving! This stew is best enjoyed warm, perhaps with some crusty bread on the side.
