Step 1
Begin by combining the brown rice flour and whole wheat flour in a mixing bowl. Gradually stir in the water until you achieve a smooth, thin batter. This is the base of your dosas, so make sure it’s well mixed!
Step 2
Next, add in the finely chopped red onion, minced garlic, and fresh cilantro. Sprinkle in the white sugar, ground turmeric, ground cumin, whole mustard seeds, cumin seeds, ground coriander, ground ginger, and a pinch of cayenne pepper. Finally, drizzle in the rice vinegar. Mix everything together until it’s evenly blended. This mixture is bursting with flavor!
Step 3
Cover the bowl with a lid or plastic wrap and let it rest in the refrigerator for at least 30 minutes, or even overnight if you have the time. This resting period allows the flavors to meld beautifully and gives you a better texture when cooking.
Step 4
When you’re ready to cook, heat the vegetable oil in a skillet over medium heat. Once the oil is hot, pour about 1/4 cup of the batter into the skillet, spreading it out gently to form a thin layer. The key to a great dosa is to keep it thin!
