Step 1
Start by heating the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the beef and pork, cooking and stirring until they are beautifully browned on all sides. This should take about 5-7 minutes. Once browned, use a slotted spoon to transfer the meat to a bowl and set it aside, allowing the flavors to mingle.
Step 2
In the same skillet, toss in the chopped green bell pepper and minced garlic. Sauté them until the bell pepper is tender and fragrant, which should take about 3-4 minutes. Once done, remove the skillet from the heat and set it aside.
Step 3
Now, grab a large pot and combine the whole peeled tomatoes (breaking them up with a spoon), chopped green chiles, fresh parsley, white sugar, ground cloves, ground cumin, and dry red wine. Stir everything together and bring the mixture to a boil, letting the vibrant flavors come alive.
Step 4
Once boiling, reduce the heat to a gentle simmer. Stir in the browned beef and pork along with any juices that have collected in the bowl. Add the sautéed green pepper and garlic to the pot as well. Cover the pot and let it simmer on low heat for about 2 hours, stirring occasionally to ensure nothing sticks to the bottom.
Step 5
After 2 hours, remove the lid and allow the stew to simmer uncovered. This will help reduce the sauce and concentrate the flavors. Let it simmer for an additional 45 minutes, stirring occasionally, until the sauce has thickened to your liking. Taste and adjust the salt as needed before serving.
