Step 1
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Step 2
In a skillet, heat the olive oil over medium-high heat. Add the chopped onion and garlic, sautéing until fragrant and slightly softened, about 3 to 5 minutes.
Step 3
In a large mixing bowl, combine the water and egg substitute. Add the sautéed onion and garlic mixture, vegan beef crumbles, chopped baguette, 1/4 cup of ketchup, and chopped parsley. Mix everything together by hand until well combined.

Transfer the mixture into the prepared loaf pan, spreading it evenly.

Bake in the preheated oven for 30 minutes.

While the loaf is baking, mix the remaining 1/4 cup of ketchup with the vegan brown sugar in a small bowl.

After 30 minutes, remove the loaf from the oven and brush the top with the ketchup mixture. Return it to the oven and continue baking until browned and a toothpick inserted into the center comes out mostly clean, about 30 more minutes.

Let the meatloaf rest for about 10 minutes before slicing and serving.
