Step 1
Start by blending the chipotle peppers, brown sugar, crushed pineapple, nutmeg, ginger, and bourbon whiskey in a blender until you achieve a smooth and luscious marinade. This blend will be the star of your dish, so make sure it's well combined!
Step 2
Next, take your smoked ham and use a sharp knife to create diagonal cuts about 1 inch apart and 1/2 inch deep in a diamond pattern. This not only helps the marinade penetrate the meat but also creates a beautiful presentation.
Step 3
Place the ham in a large bowl and pour the chipotle marinade over it, ensuring every inch is coated. Cover the bowl and let it marinate in the refrigerator for 3 to 6 hours, turning the ham occasionally to allow the flavors to infuse.

When you're ready to cook, preheat your oven to 375°F (190°C).

Remove the ham from the marinade, but don’t discard it! Place the ham in a roasting pan and roast it in the preheated oven for 30 minutes. This initial roasting will help develop a nice crust.

After the ham has roasted for 30 minutes, take it out and generously spoon the hot marinade over the top. This is where the magic happens!

Return the ham to the oven and continue baking, basting with the glaze every 30 minutes. Keep an eye on it until an instant-read thermometer inserted into the thickest part of the ham (avoiding the bone) reads at least 145°F (65°C). This should take about 1 1/2 more hours, resulting in a beautifully glazed and flavorful ham.
