Step 1
Start by activating the yeast: in a small bowl, combine the yeast, sugar, and warm water. Let it sit until bubbles form on the surface, which usually takes about 5-10 minutes. This step is crucial as it ensures your dough will rise beautifully. Once bubbly, stir in the salt and olive oil to the mixture.
Step 2
In a large mixing bowl, add the whole wheat flour. Pour in the yeast mixture and mix until it comes together to form a soft dough. Don’t worry if it seems a bit sticky at first; that’s normal!
Step 3
Transfer the dough to a lightly floured surface and knead it with your hands for about 15 minutes, or until it becomes smooth and satiny. This is a great workout for your arms and will give you a lovely dough! Once kneaded, cover the dough with a clean towel and let it rest for about 30 minutes. This resting period allows the gluten to relax, making it easier to roll out later.
Step 4
While the dough is resting, prepare the filling. Coarsely chop the fresh spinach and bring a large pot of salted water to a boil. Add the spinach and cook for just 2 minutes, or until it wilts. Drain the spinach well and return it to the pot. Now, add the chopped onions, lemon juice, garlic, basil, mint, and garlic salt. Cook this mixture for another 2 minutes, stirring frequently to blend all those wonderful flavors together.
Step 5
Preheat your oven to 450°F (230°C) and place a pizza stone inside if you have one. This will help achieve that perfect crispy crust!
Step 6
Once the dough has rested, divide it into golf-ball-sized pieces. Roll each piece into a disk about 5 inches in diameter and 1/4 inch thick. Place about 1 tablespoon of the spinach filling in the center of each disk. Remember to stir the filling occasionally to keep it from getting too watery!
Step 7
Now, fold up three sides of the disk to form a triangle, leaving a small hole in the center to allow steam to escape while baking. This is where the magic happens!
