Cooking Instructions
Follow our step-by-step guide on how to make Stir-Fried Pork with Tomatoes and Eggs.
Step 1
Start by marinating the pork. In a bowl, combine the thinly sliced pork loin with soy sauce, brandy, 1 teaspoon of sugar, and cornstarch. Mix well, cover with plastic wrap, and let it marinate in the refrigerator for 4 to 6 hours. This step is crucial as it infuses the pork with flavor and tenderness.
Step 2
Once the pork is marinated, beat the eggs in a separate bowl with the salt and set them aside. Heat half of the canola oil in a wok over medium-high heat. Pour in the beaten eggs and cook them gently until they just begin to set but are still slightly runny. Remove the eggs from the wok and set them aside; they will finish cooking later.
Step 3
In the same wok, add the remaining canola oil and increase the heat to high. Toss in the chunks of fresh tomatoes along with the remaining teaspoon of sugar. Cover the wok and let the tomatoes simmer for about 7 minutes until they soften beautifully.
Step 4
Once the tomatoes are tender, use a fork or a masher to break them down into a chunky sauce. Now, stir in the marinated pork and cook for 3 to 4 minutes, or until the pork is no longer pink in the center. The aroma will be irresistible!
Step 5
Finally, gently fold in the scrambled eggs and chopped green onions. Continue to cook uncovered for an additional 2 minutes, allowing the flavors to meld together. Serve hot and enjoy this comforting dish that brings a taste of home to your table.
