Cooking Instructions
Follow our step-by-step guide on how to make Strawberry Chocolate Chip Delight.
Step 1
Start by blending the hulled and sliced strawberries with 1/4 cup of sugar and the lemon juice in a food processor. Blend until the strawberries are coarsely chopped, then transfer the mixture to a bowl and refrigerate it for about an hour to chill. This step enhances the strawberry flavor and prepares it for the ice cream.
Step 2
In a saucepan, combine 1 cup of heavy cream, the whole milk, and 3/4 cup of sugar. Heat this mixture over medium-low heat, stirring occasionally until it's warmed through and the sugar has dissolved, which should take about 5 minutes. Once done, remove it from the heat, cover it, and let it cool for 30 minutes.
Step 3
While the cream mixture cools, whisk the egg yolks in a separate bowl. Gradually pour the warm cream mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling. Once combined, transfer this mixture back to the saucepan.
Step 4
Return the saucepan to medium heat and cook the egg yolk mixture, stirring constantly and scraping the bottom, until the custard thickens enough to coat the back of a spatula. This should take about 5 minutes, so keep an eye on it!
Step 5
Once thickened, pour the remaining 1 cup of heavy cream into a large bowl and place a strainer on top. Slowly pour the custard through the strainer into the bowl, stirring as you go. This will ensure a smooth texture. Add the vanilla extract and a pinch of salt, then gently fold in the chilled strawberry mixture and the dark chocolate chips.
Step 6
Prepare an ice bath by filling a large bowl with ice cubes and water. Place the bowl containing the strawberry-chocolate mixture into the ice bath, stirring occasionally until it cools to room temperature, which should take about 10 minutes. Once cooled, cover the bowl with plastic wrap and refrigerate it for at least 8 hours or overnight to let the flavors meld beautifully.
Step 7
When you're ready to make the ice cream, pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the ice cream to a lidded container, pressing plastic wrap against the surface to prevent ice crystals from forming. Seal the container and let it ripen in the freezer for at least 2 hours, or overnight for the best texture and flavor.
