Step 1
Start by bringing the water and sugar to a boil in a medium saucepan over medium-high heat. Keep an eye on it as it heats up, stirring occasionally. You want to reach a temperature between 234 and 240 degrees F (112 to 116 degrees C). This should take about 15 minutes. To check if it's ready, drop a small amount of syrup into a glass of cold water; it should form a soft ball that flattens when you take it out and place it on a flat surface.
Step 2
While the syrup is cooking, lightly oil a baking sheet to prevent sticking later on. This will be where your pecans cool down and harden.
Step 3
Once your syrup is at the right temperature, carefully remove it from the heat. Stir in the vanilla extract, baking powder, ground cinnamon, and red curry powder. The aroma will be delightful!
Step 4
Next, add the pecan halves to the saucepan. Return it to the stove and stir gently but thoroughly until all the pecans are well coated with the sweet and spicy sugar mixture. Keep cooking and stirring for about 5 minutes, or until the sugar starts to stick and harden on the pecans.
