Step 1
Start by filling a large pot with lightly salted water and bringing it to a rolling boil over high heat. Once the water is bubbling, toss in the Chinese noodles and let them cook uncovered, stirring occasionally, until they're tender yet still firm to the bite—this should take about 5 minutes. Once done, drain the noodles, give them a quick rinse, and set them aside for later.
Step 2
In a small bowl, whisk together the hoisin sauce, dry sherry, tangerine zest, and ground ginger. This will be the flavorful sauce that ties everything together.
Step 3
Heat 2 teaspoons of vegetable oil in a large wok or skillet over high heat. Add half of the beef strips to the pan, cooking them while stirring constantly until they’re beautifully browned—this should take about 2 to 3 minutes. Step 4
