Cooking Instructions
Follow our step-by-step guide on how to make Zesty Chicken Enchiladas.
Step 1
Preheat your oven to 350°F (175°C) and get ready for a flavor-packed adventure! In a large skillet, spray some cooking spray and heat it over medium heat. Toss in the chopped onion and minced garlic, stirring them for about 2 minutes until they become fragrant and slightly translucent. Now, add the shredded chicken, 1/4 cup of the salsa, cubed cream cheese, chopped cilantro, and ground cumin. Mix everything together and let it cook for about 5 minutes, stirring occasionally, until it's heated through and the cream cheese is melted and creamy. Stir in 1/2 cup of the shredded cheese, making sure it’s well combined with the chicken mixture. Grab your tortillas and spoon about 1/3 cup of the delicious chicken mixture down the center of each one. Roll them up tightly and place them seam-side down in a 13x9-inch baking dish that you've sprayed with cooking spray. Once all the enchiladas are snug in the dish, pour the remaining salsa over the top and sprinkle with the rest of the shredded cheese. Pop the dish in the oven and bake for 15 to 20 minutes, or until everything is heated through and the cheese is bubbly and golden. Serve these zesty enchiladas hot, and watch them disappear!
